Quesadilla Omelet

I’m trying every day to make a great lunch for work and I think that most of you have the same problem. I totally dislike eating  often the same thing and I’m forced to be creative and to try new things all the time. Today I will show one short , great and fast recipe. You can make it tonight for tomorrow’s lunch because it’s even better when it’s cold .It’s soo yummy that you could eat it quite often.

INGREDIENTS (for 4 servings):

  • 4 homemade pitas or from supermarket
  • 8 eggs
  • 400 g cheese
  • flavored herbs
  • 1 cube butter
  • salt
  • freshly ground pepper
  • frying pan –same size with pitas

INSTRUCTIONS:

The procedure is simple. You mix the eggs like you are trying to make scrambled eggs. You put the butter in the pan, wait until the butter is fluid and the put the mixed eggs. Put half of cheese and herbs on the eggs and wait until the cheese is melting and cover the scrambled eggs with one pita. Turn over the pan in a plate .

Put the scrambled eggs back in the pan, but switch sides. Add cheese and herbs , wait a minute and add on top another pita. Switch the quesadilla again for one minute and after that you can cut it in different forms.
